Butter or Coconut Oil

Fresh, firm fish fillets, approx. 2cm thick

Flour (spelt, coconut or GF flour)

Sea salt & pepper
Fresh snipped chives and/or parsley

Chopped raw almonds


Lemon juice

Extra chopped parsley

Fresh, firm-fleshed white fish (cut in 2cm cubes)

Tblspn coconut oil

Pumpkin, cut in 2cm cubes

Coconut milk (you can make your own!)

Lemon grass (white part only)

Curry Paste Ingredients

Medium tomatoes, halved

Rainforest Fruits Jeowbong

Medium red chilli, deseeded

Cloves garlic

Fresh turmeric (or 2 tsps dried turmeric powder)

Fresh ginger

Fresh galangal

Palm sugar

Chicken stock paste

Shallots (white part only, save green parts for later)

Good quality fish sauce

Tamarind paste

Lemon aspen juice (or a squeeze of lemon juice)

Soy sauce or tamari
